Den spises i mange former, fra de umodne edamameb\u00f8nner til forarbejdede produkter som tofu, tempeh, miso og sojam\u00e6lk.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Den intense debat om soja og kr\u00e6ft skyldes prim\u00e6rt \u00e9n gruppe af stoffer: isoflavoner, hvor de mest kendte er genistein og daidzein. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Disse stoffer tilh\u00f8rer en st\u00f8rre familie kaldet fyto\u00f8strogener \u2013 plantebaserede molekyler, hvis kemiske struktur minder om det kvindelige k\u00f8nshormon \u00f8strogen. Der findes to prim\u00e6re typer:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00d8strogen-receptor alfa (ER\u03b1):<\/strong> <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>N\u00e5r kroppens eget \u00f8strogen binder sig til denne receptor, sendes et signal om cellev\u00e6kst og deling (proliferation). Det er denne receptor, man frygter at aktivere i hormonf\u00f8lsom kr\u00e6ft.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00d8strogen-receptor beta (ER\u03b2):<\/strong> <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Denne receptor har den modsatte effekt. N\u00e5r den aktiveres, sender den signaler, der h\u00e6mmer cellev\u00e6kst, modvirker spredning og kan fremme celled\u00f8d (apoptose).<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Det helt afg\u00f8rende punkt er, at sojas isoflavoner har en markant st\u00e6rkere fork\u00e6rlighed for at binde sig til den beskyttende ER\u03b2-receptor. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Samtidig kan de delvist blokere for, at kroppens mere potente \u00f8strogen binder sig til den v\u00e6kstfremmende ER\u03b1-receptor. P\u00e5 den m\u00e5de kan soja potentielt have en hormonbalancerende og kr\u00e6fth\u00e6mmende effekt, snarere end en kr\u00e6ftfremmende. [3]<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Anti-angiogenese<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Kr\u00e6ftsvulster er afh\u00e6ngige af at kunne danne nye blod\u00e5rer for at f\u00e5 n\u00e6ring og vokse. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Genistein ser ud til at kunne h\u00e6mme denne proces, hvilket kan &#8220;sulte&#8221; svulsten. [4]<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Antioxidant og anti-inflammatorisk<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Kronisk inflammation er en drivkraft bag udviklingen af mange kr\u00e6ftformer. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sojas isoflavoner er potente antioxidanter, der kan hj\u00e6lpe med at neutralisere de skadelige frie radikaler og d\u00e6mpe inflammatoriske processer i kroppen. [5]<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Epigenetisk p\u00e5virkning<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Nyere forskning tyder p\u00e5, at isoflavoner kan p\u00e5virke vores epigenetik \u2013 det vil sige, de kan t\u00e6nde for beskyttende gener og slukke for gener, der er involveret i kr\u00e6ftudvikling. [11, 13]<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dette har f\u00f8rt til en enorm interesse for sojas rolle.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Brystkr\u00e6ft <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Dette er det mest omdiskuterede omr\u00e5de. Store, anerkendte studier, der har fulgt tusindvis af kvinder efter en brystkr\u00e6ftdiagnose, viser, at et moderat indtag af soja ikke \u00f8ger risikoen for tilbagefald \u2013 tv\u00e6rtimod. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Flere af disse studier peger p\u00e5, at de kvinder, der spiste mest soja, havde en lavere d\u00f8delighed og en reduceret risiko for tilbagefald. Dette g\u00e6lder ogs\u00e5 for kvinder med \u00f8strogenf\u00f8lsomme tumorer og kvinder i behandling med Tamoxifen. [7, 8, 12]<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prostatakr\u00e6ft <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Ligesom ved brystkr\u00e6ft ser sojas isoflavoner ud til at have en beskyttende effekt. Flere studier viser, at et h\u00f8jere indtag af soja er forbundet med en signifikant lavere risiko for at udvikle prostatakr\u00e6ft. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mekanismerne menes at v\u00e6re de samme: h\u00e6mning af cellev\u00e6kst og fremmelse af celled\u00f8d i kr\u00e6ftcellerne. [9]<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">M\u00e6nd og testosteron <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">En udbredt bekymring, s\u00e6rligt blandt m\u00e6nd, er, om sojas fyto\u00f8strogener kan p\u00e5virke testosteronniveauet negativt. Denne myte er dog blevet grundigt unders\u00f8gt og modbevist i en lang r\u00e6kke videnskabelige studier. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Samlede analyser af den tilg\u00e6ngelige forskning viser konsekvent, at et moderat indtag af hele sojaprodukter ikke har nogen m\u00e5lbar effekt p\u00e5 testosteronniveauet hos m\u00e6nd. Det handler her om, at naturens kompleksitet og synergi g\u00e5r tabt under den intensive forarbejdning.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Anbefalede hele og minimalt forarbejdede sojaprodukter: <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Disse produkter bevarer de fleste af sojab\u00f8nnens gavnlige fibre, vitaminer, mineraler og naturligt balancerede isoflavoner.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Edamameb\u00f8nner:<\/strong> Hele, umodne sojab\u00f8nner. Perfekt som snack eller i salater.<\/li>\n\n\n\n<li><strong>Tofu:<\/strong> Fremstillet af koaguleret sojam\u00e6lk. En alsidig proteinkilde, der kan steges, bages eller moses.<\/li>\n\n\n\n<li><strong>Tempeh:<\/strong> <strong>Fermenterede<\/strong>, hele sojab\u00f8nner presset til en &#8220;kage&#8221;. Har en n\u00f8ddeagtig smag og fast konsistens.<\/li>\n\n\n\n<li><strong>Miso:<\/strong> <strong>Fermenteret<\/strong> sojab\u00f8nnepasta. Bruges som smagsgiver i supper, dressinger og marinader.<\/li>\n\n\n\n<li><strong>Natto:<\/strong> <strong>Fermenterede<\/strong> hele sojab\u00f8nner med en meget karakteristisk smag og slimet tekstur, ofte spist til morgenmad i Japan.<\/li>\n\n\n\n<li><strong>Sojam\u00e6lk:<\/strong> Kvaliteten af sojam\u00e6lk er afg\u00f8rende. Man kan skelne mellem to hovedtyper:\n<ul class=\"wp-block-list\">\n<li><strong>Minimalt forarbejdet (anbefales):<\/strong> Ingredienslisten er kort og indeholder typisk kun sojab\u00f8nner og vand, eventuelt lidt salt. Dette produkt bevarer de gavnlige egenskaber fra den hele b\u00f8nne.<\/li>\n\n\n\n<li><strong>St\u00e6rkt forarbejdet (b\u00f8r begr\u00e6nses):<\/strong> Ingredienslisten er lang og indeholder ofte sukker, olier, fortykningsmidler og aromaer. <br>Dette produkt b\u00f8r begr\u00e6nses \u2013 ikke p\u00e5 grund af sojaen i sig selv, men p\u00e5 grund af de mange un\u00f8dvendige tils\u00e6tningsstoffer, der kan bidrage til inflammation.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Sojasauce (shoyu og tamari)<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Selvom sojasauce er et traditionelt, fermenteret sojaprodukt, adskiller det sig fra de \u00f8vrige. Under den lange brygningsproces nedbrydes st\u00f8rstedelen af sojab\u00f8nnens isoflavoner. <br>Det betyder, at sojasauce kun indeholder en ern\u00e6ringsm\u00e6ssigt ubetydelig m\u00e6ngde af de plante\u00f8strogener, der er artiklens omdrejningspunkt. <br>Produktet er derfor neutralt i denne sammenh\u00e6ng og betragtes ikke som en kilde til isoflavoner \u2013 hverken positivt eller negativt. \n<ul class=\"wp-block-list\">\n<li>For at undg\u00e5 un\u00f8dvendige tils\u00e6tningsstoffer, kan man med fordel v\u00e6lge en traditionelt brygget (ikke-kemisk fremstillet) version.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">St\u00e6rkt processerede sojaprodukter (b\u00f8r begr\u00e6nses):<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Disse produkter har mistet mange af de naturlige fordele gennem industriel forarbejdning og kan indeholde koncentrerede stoffer, der ikke findes i naturen.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sojaprotein-isolat (SPI):<\/strong> Dette er et h\u00f8jt raffineret pulver, som findes i mange proteinbarer, pulverdrikke og k\u00f8derstatninger. Under processen fjernes de fleste af b\u00f8nnens fibre, vitaminer og mineraler. Forsigtighed er tilr\u00e5deligt af to \u00e5rsager:\n<ul class=\"wp-block-list\">\n<li><strong>Ern\u00e6ringsm\u00e6ssigt:<\/strong> Produktet er den hele sojab\u00f8nne underlegen og passer d\u00e5rligt ind i en kost baseret p\u00e5 naturlige r\u00e5varer.<\/li>\n\n\n\n<li><strong>For kr\u00e6ftramte:<\/strong> SPI indeholder en unaturligt h\u00f8j koncentration af isoflavoner, der er adskilt fra b\u00f8nnens \u00f8vrige stoffer. <br>Effekten af disse h\u00f8je, isolerede doser er ikke tilstr\u00e6kkeligt unders\u00f8gt hos mennesker med kr\u00e6ft. Ud fra et forsigtighedsprincip b\u00f8r man derfor undg\u00e5 produkter med SPI for at udelukke uforudsete hormonelle p\u00e5virkninger.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Piller og kosttilskud med isolerede isoflavoner:<\/strong> At indtage isoflavoner i pilleform er fundamentalt anderledes end at spise dem i en hel f\u00f8devare. Denne skelnen er afg\u00f8rende, og der er to prim\u00e6re problemstillinger ved h\u00f8jdosis-tilskud:\n<ul class=\"wp-block-list\">\n<li><strong>Den hormonelle effekt:<\/strong> Effekten af disse unaturligt h\u00f8je og koncentrerede doser p\u00e5 kroppens samlede hormonbalance er d\u00e5rligt unders\u00f8gt hos kr\u00e6ftpatienter.<\/li>\n\n\n\n<li><strong>Interaktion med medicin:<\/strong> Vigtigst er der en teoretisk risiko for, at h\u00f8je koncentrationer af isoflavoner kan h\u00e6mme de leverenzymer (s\u00e6rligt CYP2D6), som er n\u00f8dvendige for at aktivere antihormonmedicin som Tamoxifen. \n<ul class=\"wp-block-list\">\n<li>Hvis medicinen ikke aktiveres korrekt, mister man effekten af sin kr\u00e6ftbehandling.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Mens de store befolkningsstudier viser, at soja fra kost er sikkert sammen med Tamoxifen, g\u00e6lder den samme sikkerhed ikke for h\u00f8jdosis-tilskud. Af disse \u00e5rsager frar\u00e5des tilskud med isolerede isoflavoner generelt, is\u00e6r for personer i aktiv antihormonbehandling. [10]<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Fermenteringens_kraft\"><\/span>Fermenteringens kraft<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Traditionelle asiatiske sojaprodukter som tempeh, miso og natto er fermenterede.
